The Japan Sommelier Association (JSA) was formed in 1969 with the objective of furthering a better understanding of wine and other beverages and for their promotion in Japan. The word sommelier is more often associated with wine but in recent years the JSA has focused on Sake and developed the Sake Diploma certification. The Sake Diploma is now one of the most famous and prestigious qualifications in Japan. Sake School of America is the exclusive provider of the JSA Sake Award Diploma Exam offered once a year around International Sake Day, in North America. Please note this exam includes theory and blind tasting of both Sake and Shochu.

Questions for the 2021 exam are mainly taken out of the English version of the newly revised J.S.A. SAKE DIPLOMA Textbook<Second Edition> published in May 2021.

Prerequisites

  • Candidates must successfully have completed either International Kikisake-shi (Sake Sommelier) or WSET Level 3 in Sake in order to register for this exam and highly recommended if you are taking the prep course. If you do not have either of those certifications, please email info@sakeschoolofamerica.com to inquire.

Important Notice

  • EXAM MUST BE TAKEN IN PERSON
  • You must be age 21 or over to register for the exam and any packages with tasting.
  • Please bring photo ID and registration confirmation on the day of the exam
  • Registration will close when the course reaches capacity or the registration deadline ( prep course Aug. 13, 2021, exam Sept. 17, 2021) has passed.
  • If you are outside of the Metropolitan Los Angeles area, sake tasting can be shipped to you if purchased. After your registration is completed, be sure to be in contact with Sake School of America administration to arrange your sake sample delivery.

Exam Date and Times

This will be an intensive ONLINE 5-day course,  3 hours each day. Additional self-study time and tasting homework should be taken into consideration.

We will focus on the most important information covered by the textbook, exam, and tasting.

Sake-brewing techniques and processes—how they affect the taste

  • Chapter 1: What is Sake? the main ingredients of sake — rice and water
  • Chapter 2/ Chapter 7: Different Types of Sake and Shochu, Their Production Process, detailed scientific approach to techniques and process unveiling the wondrous drink.

Theoretical/systematic approach to sake tasting

  • Chapter 4: Tasting Sake, the structure of the wine tasting process, such as Appearance, Nose, Palate, and Conclusion, are applied to sake tasting. The principles behind the storage, selection, and service of shochu

Sake/Shochu and food pairing theory with an extensive guide for international cuisines

  • Chapter 6/Chapter 8: Sake and Food, pairing ideas (Japanese and cuisines of the world) are suggested by Shinya Tasaki (president of J.S.A. and A.S.I. Best Sommelier of the World 1995).

Instructor: Toshio Ueno

Born in Yamanashi Prefecture in Japan where his family has grown wine grapes for generations, Toshio Ueno grew up helping the business from a young age. After college studies in America, he joined a pastry and wine company, where he was put in charge, overseeing the personal wine collection of the company’s president. It was at this point when intrigue set in for him to enter the world of wine stewardship and research.

Toshio Ueno is currently Director of Sake at Mutual Trading Company. With his unique knowledge and expertise in both eastern and western liquors, Jizake and Shochu of the east, and wine and beer from the west, he aims to further promote Japanese food and liquor cultures to new, international audiences.

Sara spent a year living in Japan as a high school student and grew up in a family that placed great emphasis on learning and experiencing the Japanese language and culture.  Becoming proficient in Sake has brought together Sara’s passion for the beverage industry with her life-long love of Japan, its people, traditions, and cuisine.

Sara devotes a tremendous amount of energy introducing people to the complexities and beauties of Sake and its unmatched ability to pair with food.  She has developed a growing portfolio of 135 sakes, the largest in North Carolina, which she helps to distribute, market, and educate about throughout the state and beyond.

Instructor: Rachel Io Fiekowsky

Rachel Io Fiekowsky is a New Jersey native originally coming from a background studying medical sciences. She fell in love with Japan at an early age and was determined to learn Japanese, so she did so while working on the side in restaurants between biology courses. Her curious nature, love of Sake and Shochu, and deep appreciation for Japan’s culture and cuisine earned her a place at New York Mutual Trading as a Japanese Beverage Specialist. She has been with the company since 2012.

Rachel spends each day looking for new ways to share her passion with the world and consults regularly with all sorts – producers, distributors, small businesses and consumers – on the most fun and interesting ways to experience Japan in every glass.
