The Japan Sommelier Association (JSA) was formed in 1969 with the objective of furthering a better understanding of wine and other beverages and for their promotion in Japan. The word sommelier is more often associated with wine but in recent years the JSA has focused on Sake and developed the Sake Diploma certification. The Sake Diploma is now one of the most famous and prestigious qualifications in Japan. Sake School of America is the exclusive provider of the JSA Sake Award Diploma Exam offered once a year around International Sake Day, in North America. Please note this exam includes theory and blind tasting of both Sake and Shochu.

Instructors

Instructor: Toshio Ueno

Born in Yamanashi Prefecture in Japan where his family has grown wine grapes for generations, Toshio Ueno grew up helping the business from a young age. It was at this point when intrigue set in for him to enter the world of wine stewardship and research.

With his unique knowledge and expertise in both eastern and western liquors, Jizake and Shochu of the east, and wine and beer from the west, he aims to further promote Japanese food and liquor cultures to new, international audiences.

Instructor: Rachel Io Fiekowsky

Rachel Io Fiekowsky is a New Jersey native originally coming from a background studying medical sciences. She fell in love with Japan at an early age and was determined to learn Japanese, so she did so while working on the side in restaurants between biology courses. Her curious nature, love of Sake and Shochu, and deep appreciation for Japan’s culture and cuisine earned her a place at New York Mutual Trading as a Japanese Beverage Specialist. She has been with the company since 2012.

Rachel spends each day looking for new ways to share her passion with the world and consults regularly with all sorts – producers, distributors, small businesses and consumers – on the most fun and interesting ways to experience Japan in every glass.

Masae was born in Japan but raised in New Jersey. Her hospitality experience started in restaurant accounting, eventually moving into the wine world by managing a wine bar and then spending 6 years at a small wine importing company in NYC. A Jersey girl at heart, she has spent the last few years getting in touch with her Japanese roots through the medium of sake, shochu, and Japanese spirits. Working with Sake School of America and New York Mutual Trading has allowed her to explore the history and traditions of her motherland all while practicing her (very heavily Kansai accented) Japanese language skills.

Instructor: Eda Vuong

Eda is a Californian born and raised (with a few detours here and there). She spent 10+ years in the food, restaurant, and service industry in the San Francisco and San Mateo areas, working mainly with Japanese business owners. Having found a deep love and respect for both Japanese food and culture, it was only natural that Japanese alcoholic beverages were the next step. After moving to Southern California to attend university, Eda graduated with a focus in Business and Marketing, landing her a position at Los Angeles Mutual Trading Company and Sake School of America. She believes that there is always a story behind everything and translating that story into an experience that can resonate with everyone is incredibly important, especially in sake! “I want the story I am telling to become a part of my audience’s lives and in turn, their own story. The best storytellers know that the magic is in the details and first-hand experience. Trust is key when you’re going to take someone on an adventure!” Catch Eda as a host to many of our Sake School events.

Instructor: Russell King

Russell regularly travels to Fukuoka, Japan, to visit his friends and has been lucky to stage for two chefs in Fukuoka. Through his friends, in Kyushu, he was introduced to sake and shochu. In Seattle, he was one of the founding owners of Hannyatou a Japanese sake bar specializing in Japanese beverages and fermented foods. His curiosity drives him to continuous learning and he has channeled that passion into exploring Japanese beverages and cuisine. In 2022 he joined New York Mutual Trading Company as a Japanese Beverage Specialist & Educator. He hopes to share his love of Japanese Beverages in an approachable way that encourages professional and home chefs to pair sake and shochu with all types of cuisine.
